Ingredients:

  • 2 cans (10 oz each) chopped clams, drained, juice reserved 🐚

Instructions:

  1. In a large pot, cook diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Add diced onion, celery, carrot, and minced garlic to the pot. Cook until vegetables are softened, about 5-7 minutes.
  3. Stir in diced potatoes, diced tomatoes, clam juice, water, bay leaf, dried thyme, red pepper flakes, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer uncovered until potatoes are tender, about 15-20 minutes.
  5. Once the potatoes are cooked, add the chopped clams and reserved clam juice to the pot. Simmer for an additional 5 minutes.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve the Manhattan Clam Chowder hot, garnished with crispy bacon pieces and chopped fresh parsley.
