Aloo Baingan Recipe
Ingredients:
- 2 medium-sized potatoes, peeled and diced
- 1 large eggplant (baingan), diced
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 green chili, slit lengthwise
- 1/2 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt, to taste
- Fresh coriander leaves, chopped, for garnishing
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions to the pan and sauté until they turn golden brown.
- Stir in ginger-garlic paste and slit green chili. Sauté for a minute until the raw smell disappears.
- Add chopped tomatoes to the pan and cook until they turn mushy.
- Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.
- Add diced potatoes and eggplant to the pan. Stir to coat them with the masala.
- Cover the pan with a lid and let the vegetables cook on low heat for about 15-20 minutes or until they are tender, stirring occasionally.
- Once the vegetables are cooked through, garnish with chopped fresh coriander leaves.
- Serve hot with roti or rice.
