Aloo Baingan Recipe

Ingredients:

  • 2 medium-sized potatoes, peeled and diced 🥔
  • 1 large eggplant (baingan), diced 🍆
  • 2 tablespoons oil 🌿
  • 1 teaspoon cumin seeds 🌿
  • 1 onion, finely chopped 🧅
  • 2 tomatoes, finely chopped 🍅
  • 1 tablespoon ginger-garlic paste 🧄
  • 1 green chili, slit lengthwise 🌶️
  • 1/2 teaspoon turmeric powder 🌿
  • 1 tablespoon coriander powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • 1 teaspoon garam masala 🌿
  • Salt, to taste 🧂
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions to the pan and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and slit green chili. Sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes to the pan and cook until they turn mushy.
  5. Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.
  6. Add diced potatoes and eggplant to the pan. Stir to coat them with the masala.
  7. Cover the pan with a lid and let the vegetables cook on low heat for about 15-20 minutes or until they are tender, stirring occasionally.
  8. Once the vegetables are cooked through, garnish with chopped fresh coriander leaves.
  9. Serve hot with roti or rice.
