Aloo Gobi Recipe
Ingredients:
- 2 cups cauliflower florets
- 2 potatoes, peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- 2 tablespoons oil
- Fresh coriander leaves, for garnishing
Instructions:
- Heat oil in a large pan or kadhai over medium heat.
- Add cumin seeds and mustard seeds to the hot oil. Let them splutter.
- Add finely chopped onions to the pan and sauté until they turn golden brown.
- Add ginger-garlic paste and slit green chilies. Sauté for a couple of minutes until the raw smell disappears.
- Add finely chopped tomatoes to the pan. Cook until they turn soft and mushy.
- Add turmeric powder, coriander powder, red chili powder, and salt to the pan. Mix well to combine with the onions and tomatoes.
- Add cauliflower florets and diced potatoes to the pan. Mix well to coat them with the spice mixture.
- Cover the pan with a lid and let the vegetables cook over medium-low heat for about 15-20 minutes, stirring occasionally. If the mixture becomes too dry, you can add a splash of water to prevent sticking.
- Once the cauliflower and potatoes are cooked through and tender, sprinkle garam masala powder over the vegetables. Mix well to incorporate.
- Cook for another 2-3 minutes, allowing the flavors to meld together.
- Garnish the Aloo Gobi with fresh coriander leaves before serving.
- Serve hot Aloo Gobi with roti, naan, or rice for a delicious North Indian meal.
