Aloo Gobi Recipe

Ingredients:

  • 2 cups cauliflower florets
  • 2 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala powder
  • Salt, to taste
  • 2 tablespoons oil
  • Fresh coriander leaves, for garnishing

Instructions:

  1. Heat oil in a large pan or kadhai over medium heat.
  2. Add cumin seeds and mustard seeds to the hot oil. Let them splutter.
  3. Add finely chopped onions to the pan and sauté until they turn golden brown.
  4. Add ginger-garlic paste and slit green chilies. Sauté for a couple of minutes until the raw smell disappears.
  5. Add finely chopped tomatoes to the pan. Cook until they turn soft and mushy.
  6. Add turmeric powder, coriander powder, red chili powder, and salt to the pan. Mix well to combine with the onions and tomatoes.
  7. Add cauliflower florets and diced potatoes to the pan. Mix well to coat them with the spice mixture.
  8. Cover the pan with a lid and let the vegetables cook over medium-low heat for about 15-20 minutes, stirring occasionally. If the mixture becomes too dry, you can add a splash of water to prevent sticking.
  9. Once the cauliflower and potatoes are cooked through and tender, sprinkle garam masala powder over the vegetables. Mix well to incorporate.
  10. Cook for another 2-3 minutes, allowing the flavors to meld together.
  11. Garnish the Aloo Gobi with fresh coriander leaves before serving.
  12. Serve hot Aloo Gobi with roti, naan, or rice for a delicious North Indian meal.
