Aloo Kofta Recipe

Ingredients:

For Aloo Kofta (Potato Dumplings):

  • 3 large potatoes, boiled, peeled, and mashed πŸ₯”

  • 2 tablespoons cornflour or all-purpose flour 🌾
  • 1 teaspoon ginger-garlic paste πŸ§„
  • 1 green chili, finely chopped 🌢️
  • 1/2 teaspoon cumin powder 🌿
  • 1/2 teaspoon garam masala 🌿
  • Salt, to taste πŸ§‚
  • Oil, for deep frying 🌿

For Gravy:

  • 2 onions, finely chopped πŸ§…
  • 2 tomatoes, pureed πŸ…
  • 1 tablespoon ginger-garlic paste πŸ§„
  • 1 green chili, slit lengthwise 🌢️
  • 1 teaspoon cumin seeds 🌿
  • 1 teaspoon coriander powder 🌿
  • 1/2 teaspoon turmeric powder 🌿
  • 1/2 teaspoon red chili powder 🌢️
  • 1/2 teaspoon garam masala 🌿
  • 1/4 cup fresh cream (optional) πŸ₯›
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

For Aloo Kofta:

  1. In a mixing bowl, combine mashed potatoes, grated paneer, cornflour or all-purpose flour, ginger-garlic paste, chopped green chili, cumin powder, garam masala, and salt. Mix well to form a smooth dough.
  2. Divide the dough into small lemon-sized balls and shape them into smooth koftas or dumplings.
  3. Heat oil in a deep frying pan over medium heat. Once the oil is hot, gently slide in the prepared koftas in batches.
  4. Fry the koftas until they turn golden brown and crispy on all sides. Remove them from the oil and drain excess oil on a paper towel. Set aside.

For Gravy:

  1. Heat oil in a separate pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions to the pan and sautΓ© until they turn golden brown.
  3. Stir in ginger-garlic paste and slit green chili. SautΓ© for a minute until the raw smell disappears.
  4. Add tomato puree to the pan and cook until the oil starts to separate from the masala.
  5. Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.
  6. Cook the gravy until the oil starts to separate from the masala.
  7. Add water as needed to adjust the consistency of the gravy. Simmer for 5-7 minutes on low heat.
  8. Optionally, add fresh cream to the gravy and mix well.
  9. Add the fried aloo koftas to the gravy and let them simmer for a couple of minutes.
  10. Garnish with chopped fresh coriander leaves.
