Aloo Matar Gobi Recipe
Ingredients:
- 2 potatoes, peeled and cubed
- 1 cup cauliflower florets
- 1/2 cup green peas
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, slit lengthwise
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt, to taste
- 2 tablespoons oil
- Fresh coriander leaves, chopped, for garnishing
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions to the pan and sauté until they turn golden brown.
- Stir in ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.
- Add chopped tomatoes to the pan and cook until they turn mushy.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add cubed potatoes, cauliflower florets, and green peas to the pan. Mix them with the masala.
- Cover and cook until the vegetables are tender, stirring occasionally.
- Once the vegetables are cooked, sprinkle garam masala over the curry and mix well.
- Simmer for a few more minutes until the flavors blend together.
- Garnish with chopped fresh coriander leaves.
- Serve hot with rice or roti.
