Ingredients:

  • 2 potatoes, peeled and cubed 🥔
  • 1 cup cauliflower florets 🥦
  • 1/2 cup green peas 🌱
  • 2 tomatoes, finely chopped 🍅
  • 1 onion, finely chopped 🧅
  • 1 tablespoon ginger-garlic paste 🧄
  • 2 green chilies, slit lengthwise 🌶️
  • 1 teaspoon cumin seeds 🌿
  • 1 teaspoon turmeric powder 🌿
  • 1 teaspoon coriander powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • 1/2 teaspoon garam masala 🌿
  • Salt, to taste 🧂
  • 2 tablespoons oil 🌿
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions to the pan and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and slit green chilies. Sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes to the pan and cook until they turn mushy.
  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  6. Add cubed potatoes, cauliflower florets, and green peas to the pan. Mix them with the masala.
  7. Cover and cook until the vegetables are tender, stirring occasionally.
  8. Once the vegetables are cooked, sprinkle garam masala over the curry and mix well.
  9. Simmer for a few more minutes until the flavors blend together.
  10. Garnish with chopped fresh coriander leaves.
  11. Serve hot with rice or roti.
