Aloo Posto Recipe
Ingredients:
- 4 medium-sized potatoes, peeled and cubed 🥔
- 3 tablespoons poppy seeds (khus khus) 🌿
- 2 green chilies, chopped 🌶️
- 1/2 teaspoon turmeric powder 🌿
- 1/2 teaspoon red chili powder 🌶️
- 1/2 teaspoon sugar 🧂
- Salt, to taste 🧂
- 2 tablespoons mustard oil or vegetable oil 🌿
- Fresh coriander leaves, chopped, for garnishing 🌿
Instructions:
- Dry roast the poppy seeds in a pan over low heat until they turn golden brown. Let them cool down, then grind them into a fine powder using a grinder or mortar and pestle.
- Heat mustard oil or vegetable oil in a pan over medium heat.
- Add the cubed potatoes to the hot oil and fry until they are golden brown. Remove them from the pan and set aside.
- In the same pan, add chopped green chilies and sauté for a minute.
- Add the ground poppy seed powder to the pan and sauté for another minute.
- Sprinkle turmeric powder, red chili powder, sugar, and salt over the mixture. Mix well to combine.
- Add the fried potatoes back to the pan and stir until they are evenly coated with the spice mixture.
- Pour in a little water to create a thick gravy consistency. Cover the pan and let the potatoes cook over low heat until they are tender.
- Once the potatoes are cooked through and the gravy thickens, remove from heat.
- Garnish the Aloo Posto with freshly chopped coriander leaves.
- Serve the flavorful Aloo Posto hot with steamed rice or roti.
