Aloo Posto Recipe

Ingredients:

  • 4 medium-sized potatoes, peeled and cubed 🥔
  • 3 tablespoons poppy seeds (khus khus) 🌿
  • 2 green chilies, chopped 🌶️
  • 1/2 teaspoon turmeric powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • 1/2 teaspoon sugar 🧂
  • Salt, to taste 🧂
  • 2 tablespoons mustard oil or vegetable oil 🌿
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

  1. Dry roast the poppy seeds in a pan over low heat until they turn golden brown. Let them cool down, then grind them into a fine powder using a grinder or mortar and pestle.
  2. Heat mustard oil or vegetable oil in a pan over medium heat.
  3. Add the cubed potatoes to the hot oil and fry until they are golden brown. Remove them from the pan and set aside.
  4. In the same pan, add chopped green chilies and sauté for a minute.
  5. Add the ground poppy seed powder to the pan and sauté for another minute.
  6. Sprinkle turmeric powder, red chili powder, sugar, and salt over the mixture. Mix well to combine.
  7. Add the fried potatoes back to the pan and stir until they are evenly coated with the spice mixture.
  8. Pour in a little water to create a thick gravy consistency. Cover the pan and let the potatoes cook over low heat until they are tender.
  9. Once the potatoes are cooked through and the gravy thickens, remove from heat.
  10. Garnish the Aloo Posto with freshly chopped coriander leaves.
  11. Serve the flavorful Aloo Posto hot with steamed rice or roti.
