Baingan Bharta Recipe

Ingredients:

  • 2 large eggplants (baingan) 🍆
  • 2 onions, finely chopped 🧅
  • 2 tomatoes, finely chopped 🍅
  • 2 green chilies, chopped 🌶️
  • 1 tablespoon ginger-garlic paste 🧄
  • 1 teaspoon cumin seeds 🌿
  • 1/2 teaspoon turmeric powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • 1/2 teaspoon garam masala 🌿
  • Salt, to taste 🧂
  • Fresh coriander leaves, chopped, for garnishing 🌿
  • 2 tablespoons ghee or vegetable oil 🌿

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Wash the eggplants and pat them dry. Prick them with a fork all over.
  3. Rub the eggplants with a little oil and place them on a baking tray.
  4. Roast the eggplants in the preheated oven for about 30-40 minutes, or until they are completely soft and the skin is charred.
  5. Remove the eggplants from the oven and let them cool slightly. Peel off the charred skin and discard it.
  6. Mash the roasted eggplants using a fork or potato masher until they are smooth and pulpy. Set aside.
  7. Heat ghee or vegetable oil in a pan over medium heat.
  8. Add cumin seeds to the hot oil and let them splutter.
  9. Add chopped onions to the pan and sauté until they turn golden brown.
  10. Stir in ginger-garlic paste and chopped green chilies. Sauté for another minute.
  11. Add chopped tomatoes to the pan and cook until they are soft and mushy.
  12. Add turmeric powder, red chili powder, garam masala, and salt to the pan. Mix well with the onion-tomato mixture.
  13. Add the mashed eggplant to the pan and mix well with the masala.
  14. Cook the Baingan Bharta for a few minutes, allowing the flavors to meld together.
  15. Garnish the Baingan Bharta with freshly chopped coriander leaves.
  16. Serve the hot and smoky Baingan Bharta with roti, naan, or rice.
