Baingan Bharta Recipe
Ingredients:
- 2 large eggplants (baingan) 🍆
- 2 onions, finely chopped 🧅
- 2 tomatoes, finely chopped 🍅
- 2 green chilies, chopped 🌶️
- 1 tablespoon ginger-garlic paste 🧄
- 1 teaspoon cumin seeds 🌿
- 1/2 teaspoon turmeric powder 🌿
- 1/2 teaspoon red chili powder 🌶️
- 1/2 teaspoon garam masala 🌿
- Salt, to taste 🧂
- Fresh coriander leaves, chopped, for garnishing 🌿
- 2 tablespoons ghee or vegetable oil 🌿
Instructions:
- Preheat the oven to 200°C (400°F).
- Wash the eggplants and pat them dry. Prick them with a fork all over.
- Rub the eggplants with a little oil and place them on a baking tray.
- Roast the eggplants in the preheated oven for about 30-40 minutes, or until they are completely soft and the skin is charred.
- Remove the eggplants from the oven and let them cool slightly. Peel off the charred skin and discard it.
- Mash the roasted eggplants using a fork or potato masher until they are smooth and pulpy. Set aside.
- Heat ghee or vegetable oil in a pan over medium heat.
- Add cumin seeds to the hot oil and let them splutter.
- Add chopped onions to the pan and sauté until they turn golden brown.
- Stir in ginger-garlic paste and chopped green chilies. Sauté for another minute.
- Add chopped tomatoes to the pan and cook until they are soft and mushy.
- Add turmeric powder, red chili powder, garam masala, and salt to the pan. Mix well with the onion-tomato mixture.
- Add the mashed eggplant to the pan and mix well with the masala.
- Cook the Baingan Bharta for a few minutes, allowing the flavors to meld together.
- Garnish the Baingan Bharta with freshly chopped coriander leaves.
- Serve the hot and smoky Baingan Bharta with roti, naan, or rice.
