Bedmi Poori Recipe

Ingredients:

For the dough:

  • 2 cups whole wheat flour ๐ŸŒพ
  • 1/2 cup urad dal (black gram), soaked for 4-6 hours ๐ŸŒฟ
  • 2-3 green chilies, chopped ๐ŸŒถ๏ธ
  • 1-inch piece of ginger, grated ๐Ÿง„
  • 1 teaspoon cumin seeds ๐ŸŒฟ
  • 1/2 teaspoon asafoetida (hing) ๐ŸŒฟ
  • 1/2 teaspoon turmeric powder ๐ŸŒฟ
  • Salt, to taste ๐Ÿง‚
  • Water, as needed ๐Ÿ’ง
  • Vegetable oil, for frying ๐ŸŒฟ

Instructions:

For the stuffing:

  1. Rinse the soaked urad dal thoroughly and drain excess water.
  2. Grind the urad dal along with chopped green chilies, grated ginger, cumin seeds, asafoetida, turmeric powder, and salt to a coarse paste without adding water. Set aside.

For the dough:

  1. In a large mixing bowl, combine the whole wheat flour with the prepared urad dal paste.
  2. Knead the mixture into a smooth and firm dough, adding water as needed.
  3. Cover the dough and let it rest for 15-20 minutes.

For frying the pooris:

  1. Heat vegetable oil in a deep frying pan over medium heat.
  2. Divide the dough into small lemon-sized balls and roll them into smooth balls.
  3. Flatten each ball slightly and roll it out into small discs using a rolling pin.
  4. Carefully slide the rolled poori into the hot oil and fry until it puffs up and turns golden brown on both sides.
  5. Remove the fried poori from the oil using a slotted spoon and drain excess oil on paper towels.
  6. Repeat the process with the remaining dough balls.

Serving:

  1. Serve the hot and crispy Bedmi Pooris with aloo sabzi, pickle, or any side dish of your choice.
  2. Enjoy the flavorful and indulgent Bedmi Pooris as a delicious meal or snack!
