Bedmi Poori Recipe
Ingredients:
For the dough:
- 2 cups whole wheat flour ๐พ
- 1/2 cup urad dal (black gram), soaked for 4-6 hours ๐ฟ
- 2-3 green chilies, chopped ๐ถ๏ธ
- 1-inch piece of ginger, grated ๐ง
- 1 teaspoon cumin seeds ๐ฟ
- 1/2 teaspoon asafoetida (hing) ๐ฟ
- 1/2 teaspoon turmeric powder ๐ฟ
- Salt, to taste ๐ง
- Water, as needed ๐ง
- Vegetable oil, for frying ๐ฟ
Instructions:
For the stuffing:
- Rinse the soaked urad dal thoroughly and drain excess water.
- Grind the urad dal along with chopped green chilies, grated ginger, cumin seeds, asafoetida, turmeric powder, and salt to a coarse paste without adding water. Set aside.
For the dough:
- In a large mixing bowl, combine the whole wheat flour with the prepared urad dal paste.
- Knead the mixture into a smooth and firm dough, adding water as needed.
- Cover the dough and let it rest for 15-20 minutes.
For frying the pooris:
- Heat vegetable oil in a deep frying pan over medium heat.
- Divide the dough into small lemon-sized balls and roll them into smooth balls.
- Flatten each ball slightly and roll it out into small discs using a rolling pin.
- Carefully slide the rolled poori into the hot oil and fry until it puffs up and turns golden brown on both sides.
- Remove the fried poori from the oil using a slotted spoon and drain excess oil on paper towels.
- Repeat the process with the remaining dough balls.
Serving:
- Serve the hot and crispy Bedmi Pooris with aloo sabzi, pickle, or any side dish of your choice.
