Bedmi Puri Recipe

Ingredients:

  • 1 cup whole wheat flour (atta) ๐ŸŒพ
  • 1/4 cup split black gram (urad dal), soaked for 4-6 hours ๐ŸŒฑ
  • 1 teaspoon fennel seeds ๐ŸŒฟ
  • 1 teaspoon cumin seeds ๐ŸŒฟ
  • 1 teaspoon ginger, grated ๐Ÿง…
  • 1 green chili, finely chopped ๐ŸŒถ๏ธ
  • 1/2 teaspoon turmeric powder ๐ŸŒฟ
  • 1/2 teaspoon red chili powder ๐ŸŒถ๏ธ
  • 1/2 teaspoon coriander powder ๐ŸŒฟ
  • Salt, to taste ๐Ÿง‚
  • Oil, for frying ๐Ÿณ
  • Water, as needed ๐Ÿ’ง
  • Fresh coriander leaves, chopped, for garnishing ๐ŸŒฟ

Instructions:

  1. Drain the soaked urad dal and grind it into a coarse paste without adding water.
  2. In a mixing bowl, combine whole wheat flour, ground urad dal paste, fennel seeds, cumin seeds, grated ginger, chopped green chili, turmeric powder, red chili powder, coriander powder, and salt.
  3. Mix well to form a smooth dough, adding water as needed to bind the ingredients together. Cover the dough and let it rest for 15-20 minutes.
  4. Divide the dough into small lemon-sized balls and roll each ball into a small disc using a rolling pin.
  5. Heat oil in a deep frying pan or kadhai over medium heat.
  6. Once the oil is hot, carefully slide in the rolled puris, a few at a time.
  7. Fry the puris until they are golden brown and puffed up on both sides, gently pressing them with a slotted spoon while frying to ensure even cooking.
  8. Once cooked, remove the puris from the oil and drain excess oil on paper towels.
  9. Serve hot Bedmi Puris with aloo sabzi or any other curry of your choice.
  10. Garnish with freshly chopped coriander leaves before serving.
