Bedmi Puri Recipe
Ingredients:
- 1 cup whole wheat flour (atta)
- 1/4 cup split black gram (urad dal), soaked for 4-6 hours
- 1 teaspoon fennel seeds
- 1 teaspoon cumin seeds
- 1 teaspoon ginger, grated
- 1 green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon coriander powder
- Salt, to taste
- Oil, for frying
- Water, as needed
- Fresh coriander leaves, chopped, for garnishing
Instructions:
- Drain the soaked urad dal and grind it into a coarse paste without adding water.
- In a mixing bowl, combine whole wheat flour, ground urad dal paste, fennel seeds, cumin seeds, grated ginger, chopped green chili, turmeric powder, red chili powder, coriander powder, and salt.
- Mix well to form a smooth dough, adding water as needed to bind the ingredients together. Cover the dough and let it rest for 15-20 minutes.
- Divide the dough into small lemon-sized balls and roll each ball into a small disc using a rolling pin.
- Heat oil in a deep frying pan or kadhai over medium heat.
- Once the oil is hot, carefully slide in the rolled puris, a few at a time.
- Fry the puris until they are golden brown and puffed up on both sides, gently pressing them with a slotted spoon while frying to ensure even cooking.
- Once cooked, remove the puris from the oil and drain excess oil on paper towels.
- Serve hot Bedmi Puris with aloo sabzi or any other curry of your choice.
- Garnish with freshly chopped coriander leaves before serving.
