Bharwa Karela Recipe

Ingredients:

  • 4-5 medium-sized bitter gourds (karela) 🥒
  • 2 onions, finely chopped 🧅
  • 2 tomatoes, finely chopped 🍅
  • 2 tablespoons gram flour (besan) 🌾
  • 1 tablespoon ginger-garlic paste 🧄
  • 1 teaspoon turmeric powder 🌿
  • 1 teaspoon coriander powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • 1/2 teaspoon garam masala 🌿
  • Salt, to taste 🧂
  • 2 tablespoons cooking oil 🌿
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

  1. Wash the bitter gourds and scrape off the rough outer skin. Slit them lengthwise, remove the seeds, and keep aside.
  2. In a bowl, mix together chopped onions, chopped tomatoes, gram flour, ginger-garlic paste, turmeric powder, coriander powder, red chili powder, garam masala, and salt to make the stuffing mixture.
  3. Stuff the prepared mixture into the slit bitter gourds, pressing gently to fill them evenly.
  4. Heat oil in a pan over medium heat. Place the stuffed bitter gourds in the pan and cook them covered for about 10 minutes.
  5. After 10 minutes, uncover the pan and flip the bitter gourds. Cook for another 10-15 minutes until they turn golden brown and are cooked through.
  6. Once done, garnish with chopped fresh coriander leaves.
  7. Serve hot with roti or rice.
