Chemmeen Moilee Recipe
Ingredients:
- 500g fresh prawns, cleaned and deveined
- 1 cup coconut milk
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, slit lengthwise
- 1-inch ginger, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds
- A handful of curry leaves
- 2 tablespoons coconut oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat coconut oil in a pan over medium heat. Add mustard seeds and fenugreek seeds. Let them splutter.
- Add chopped onions and sautΓ© until they turn golden brown.
- Add chopped ginger, garlic, and green chilies. SautΓ© for another couple of minutes until fragrant.
- Add turmeric powder, red chili powder, and coriander powder. Stir well to combine.
- Add chopped tomatoes and cook until they turn mushy and oil starts to separate.
- Now, add cleaned prawns to the mixture. Mix well and cook for 3-4 minutes until they turn pink.
- Pour in coconut milk and stir gently. Let it simmer for 5-7 minutes on low heat.
- Season with salt according to taste and add curry leaves for flavor.
- Once the curry reaches desired consistency, turn off the heat. Garnish with fresh coriander leaves.
- Serve hot with steamed rice or appam. Enjoy the flavors of South India!
