Chicken Chettinad Delicious Recipe

Ingredients:

  • 500g chicken, cleaned and cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1/4 cup grated coconut
  • 1 tablespoon poppy seeds (khus khus)
  • 1 tablespoon fennel seeds
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon black peppercorns
  • 4-5 dried red chilies
  • 1-inch cinnamon stick
  • 4-5 cloves
  • 2-3 green cardamom pods
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves for garnishing
  • 2 tablespoons oil
  • Water as needed

Instructions:

  1. Prepare Spice Paste:
    • Dry roast grated coconut, poppy seeds, fennel seeds, coriander seeds, cumin seeds, black peppercorns, dried red chilies, cinnamon stick, cloves, and green cardamom pods until fragrant.
    • Allow the roasted spices to cool down, then grind them into a smooth paste using a blender or mortar and pestle. Add water as needed to make a smooth paste. Set aside.
  2. Marinate Chicken:
    • In a mixing bowl, combine the chicken pieces with ginger-garlic paste, turmeric powder, red chili powder, coriander powder, garam masala powder, and salt. Mix well to coat the chicken pieces evenly. Let it marinate for at least 30 minutes.
  3. Prepare Cooking Base:
    • Heat oil in a large skillet or kadai over medium heat.
    • Add finely chopped onions and sauté until they turn golden brown.
    • Add finely chopped tomatoes and cook until they turn soft and mushy.
  4. Cook Chicken:
    • Add the marinated chicken pieces to the skillet and mix well with the onion-tomato mixture.
    • Cover and cook the chicken on medium-low heat until it's tender and cooked through, stirring occasionally. Add water if needed to prevent sticking and ensure even cooking.
  5. Add Spice Paste:
    • Once the chicken is cooked, add the prepared spice paste to the skillet.
    • Mix well to combine the spice paste with the chicken and cook for another 5-7 minutes, allowing the flavors to meld together.
  6. Adjust Consistency and Seasoning:
    • If the gravy is too thick, add some water to adjust the consistency according to your preference.
    • Taste and adjust the seasoning by adding more salt or spices if needed.
  7. Garnish and Serve:
    • Garnish the Chicken Chettinad with fresh coriander leaves.
