Chicken Ghee Roast Recipe

Ingredients:

For Marinating Chicken:

  • 500 grams chicken, cut into pieces
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons red chili powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • Salt to taste

For Masala Paste:

  • 10-12 dry red chilies, deseeded and soaked in warm water
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon peppercorns
  • 1/2 teaspoon fenugreek seeds
  • 6-8 garlic cloves
  • 1-inch ginger, chopped
  • 1 tablespoon tamarind paste
  • 2 tablespoons ghee (clarified butter)
  • Salt to taste

Other Ingredients:

  • 2 tablespoons ghee (clarified butter)
  • A few curry leaves
  • Chopped coriander leaves for garnishing

Instructions:

Marinating Chicken:

In a bowl, combine chicken pieces with ginger-garlic paste, red chili powder, coriander powder, turmeric powder, lemon juice, and salt. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.

Prepare Masala Paste:

In a small pan, dry roast coriander seeds, cumin seeds, peppercorns, and fenugreek seeds until fragrant. Allow them to cool down. In a blender or food processor, add soaked red chilies (without water), roasted spices, garlic cloves, chopped ginger, tamarind paste, and a little water. Grind to a smooth paste.

Cook Chicken Ghee Roast:

  1. Heat ghee in a pan over medium heat.
  2. Add marinated chicken pieces and sauté until they are partially cooked and start to turn golden brown. Remove the chicken from the pan and set aside.
  3. In the same pan, add the prepared masala paste and sauté for a few minutes until the raw smell disappears and the masala is fragrant.
  4. Return the partially cooked chicken to the pan. Mix well to coat the chicken pieces evenly with the masala.
  5. Cover the pan and let the chicken cook over low heat until it is tender and cooked through. Stir occasionally to prevent burning.
  6. Once the chicken is cooked, add curry leaves and continue to cook for another few minutes.
  7. Garnish with chopped coriander leaves.

Serve:

  1. Serve hot Chicken Ghee Roast with steamed rice, dosa, or chapati.

Note:

  • Adjust the spiciness according to your preference by increasing or decreasing the amount of red chili powder and dry red chilies in the masala paste.
