Curd Rice Recipe

Ingredients:

  • 1 cup rice (preferably short-grain)
  • 2 cups yogurt (curd), preferably sour
  • 1/4 cup milk (optional, for creaminess)
  • 1 tablespoon oil or ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon split black gram (urad dal)
  • 1 teaspoon split Bengal gram (chana dal)
  • 2-3 green chilies, finely chopped
  • 1/2 inch piece of ginger, grated
  • 1-2 sprigs of curry leaves
  • 2 tablespoons finely chopped coriander leaves (cilantro)
  • Salt to taste

Instructions:

  1. Cooking Rice:
    • Rinse the rice thoroughly and cook it until it's soft and mushy. You can cook it in a rice cooker or on the stovetop. Once cooked, allow it to cool down to room temperature.
  2. Preparation of Yogurt Mixture:
    • In a large mixing bowl, whisk the yogurt until smooth. If the yogurt is too thick, you can add a little milk to achieve the desired consistency. Ensure that the yogurt is not too sour, as it can overpower the dish.
  3. Mixing Rice and Yogurt:
    • Once the rice has cooled down, add it to the bowl of yogurt. Mix well until the rice is evenly coated with the yogurt mixture. The consistency of the curd rice should be creamy but not too runny.
  4. Tempering:
    • Heat oil or ghee in a small pan over medium heat.
    • Add mustard seeds and let them splutter.
    • Add split black gram (urad dal) and split Bengal gram (chana dal). Fry until they turn golden brown.
    • Add finely chopped green chilies, grated ginger, and curry leaves. Sauté for a minute until the aromatics release their fragrance.
  5. Mixing Tempering with Curd Rice:
    • Pour the tempering over the curd rice mixture. Mix well to incorporate the flavors throughout the dish.
  6. Seasoning:
    • Add salt to taste and mix it thoroughly with the curd rice.
  7. Garnish:
    • Garnish the curd rice with finely chopped coriander leaves (cilantro) for freshness and color.
  8. Chilling (Optional):
    • You can serve the curd rice immediately at room temperature or chill it in the refrigerator for a couple of hours before serving. Chilling enhances the flavors and makes it more refreshing, especially on a hot day.
