Dum Aloo Banarasi Recipe
Ingredients:
- 500 grams baby potatoes, boiled and peeled
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt, to taste
- Fresh coriander leaves, chopped, for garnishing
Instructions:
- Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions to the pan and sauté until they turn golden brown.
- Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add tomato puree to the pan and cook until the oil separates from the masala.
- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
- Add boiled baby potatoes to the pan and coat them evenly with the masala.
- Pour in enough water to cover the potatoes and bring the curry to a gentle boil.
- Cover the pan with a lid and let the Dum Aloo simmer on low heat for 10-12 minutes, allowing the flavors to meld together.
- Once done, garnish with chopped fresh coriander leaves.
- Serve hot with roti or rice.
