Dum Aloo Banarasi Recipe

Ingredients:

  • 500 grams baby potatoes, boiled and peeled 🥔
  • 2 tablespoons oil or ghee 🌿
  • 1 teaspoon cumin seeds 🌿
  • 2 onions, finely chopped 🧅
  • 2 tomatoes, pureed 🍅
  • 1 tablespoon ginger-garlic paste 🧄
  • 1/2 teaspoon turmeric powder 🌿
  • 1 teaspoon red chili powder 🌶️
  • 1 teaspoon coriander powder 🌿
  • 1/2 teaspoon garam masala 🌿
  • Salt, to taste 🧂
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

  1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions to the pan and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add tomato puree to the pan and cook until the oil separates from the masala.
  5. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  6. Add boiled baby potatoes to the pan and coat them evenly with the masala.
  7. Pour in enough water to cover the potatoes and bring the curry to a gentle boil.
  8. Cover the pan with a lid and let the Dum Aloo simmer on low heat for 10-12 minutes, allowing the flavors to meld together.
  9. Once done, garnish with chopped fresh coriander leaves.
  10. Serve hot with roti or rice.
