Ingredients:🥘
- 1 kg carrots, grated
- 1 liter full-fat milk
- 1/2 cup sugar (adjust to taste)
- 4 tablespoons ghee (clarified butter)
- 1/4 cup chopped nuts (cashews, almonds, pistachios)
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Raisins for garnishing (optional)
Instructions:🍽️
- In a heavy-bottomed pan, heat 2 tablespoons of ghee over medium heat.
- Add the grated carrots to the pan and sauté them in the ghee for 5-7 minutes, stirring occasionally.
- Pour the milk into the pan and bring it to a gentle boil.
- Reduce the heat to low and let the carrots cook in the milk, stirring occasionally, until the milk reduces and thickens, and the carrots become soft and mushy. This may take about 30-40 minutes.
- Add sugar to the pan and mix well. Cook for another 10-15 minutes until the sugar is completely dissolved and the mixture thickens further.
- In a separate small pan, heat the remaining 2 tablespoons of ghee. Add the chopped nuts and sauté them until they turn golden brown.
- Add the sautéed nuts, cardamom powder, and saffron strands (if using) to the carrot mixture. Mix well to combine.
- Cook the halwa for another 5-10 minutes, stirring continuously, until it reaches a thick, pudding-like consistency and starts to leave the sides of the pan.
- Remove the pan from the heat.
- Garnish the Gajar Ka Halwa with some more chopped nuts and raisins, if desired.
