Hing Kachori Recipe

Ingredients:

  • 2 cups all-purpose flour 🍞

Instructions:

  1. In a mixing bowl, combine all-purpose flour, semolina, ghee or oil, and salt. Mix well until the mixture resembles breadcrumbs.
  2. Gradually add water and knead the mixture into a firm dough. Cover the dough and let it rest for 15-20 minutes.
  3. Meanwhile, prepare the filling. Drain the soaked chana dal and grind it into a coarse paste without adding water.
  4. Heat oil in a pan over medium heat. Add cumin seeds, fennel seeds, grated ginger, and chopped green chili. SautΓ© for a minute.
  5. Add the ground chana dal paste to the pan. Cook for 5-7 minutes, stirring continuously.
  6. Add asafoetida (hing) powder, turmeric powder, red chili powder, coriander powder, and salt to the pan. Mix well and cook for another 2-3 minutes. Remove from heat and let it cool.
  7. Divide the dough into equal-sized balls. Roll out each ball into a small circle.
  8. Place a spoonful of the prepared filling in the center of each circle. Bring the edges of the dough together to seal and form a ball. Gently flatten the ball with your palms.
  9. Heat oil in a deep frying pan over medium heat.
  10. Once the oil is hot, carefully slide in the stuffed dough balls, a few at a time.
  11. Fry the kachoris until they are golden brown and crispy on both sides, flipping them occasionally to ensure even cooking.
  12. Once cooked, remove the kachoris from the oil and drain excess oil on paper towels.
