Hing Kachori Recipe
Ingredients:
- 2 cups all-purpose flour π
- 1/4 cup semolina (sooji) πΎ
- 1/4 cup ghee or oil π₯
- 1/2 teaspoon salt π§
- Water, as needed π§
- 1 cup yellow split peas (chana dal), soaked for 4-6 hours π±
- 1 teaspoon asafoetida (hing) powder πΏ
- 1 teaspoon cumin seeds πΏ
- 1 teaspoon fennel seeds πΏ
- 1 teaspoon ginger, grated π§
- 1 teaspoon green chili, finely chopped πΆοΈ
- 1/2 teaspoon turmeric powder πΏ
- 1 teaspoon red chili powder πΆοΈ
- 1 teaspoon coriander powder πΏ
- Salt, to taste π§
- Oil, for frying π³
Instructions:
- In a mixing bowl, combine all-purpose flour, semolina, ghee or oil, and salt. Mix well until the mixture resembles breadcrumbs.
- Gradually add water and knead the mixture into a firm dough. Cover the dough and let it rest for 15-20 minutes.
- Meanwhile, prepare the filling. Drain the soaked chana dal and grind it into a coarse paste without adding water.
- Heat oil in a pan over medium heat. Add cumin seeds, fennel seeds, grated ginger, and chopped green chili. SautΓ© for a minute.
- Add the ground chana dal paste to the pan. Cook for 5-7 minutes, stirring continuously.
- Add asafoetida (hing) powder, turmeric powder, red chili powder, coriander powder, and salt to the pan. Mix well and cook for another 2-3 minutes. Remove from heat and let it cool.
- Divide the dough into equal-sized balls. Roll out each ball into a small circle.
- Place a spoonful of the prepared filling in the center of each circle. Bring the edges of the dough together to seal and form a ball. Gently flatten the ball with your palms.
- Heat oil in a deep frying pan over medium heat.
- Once the oil is hot, carefully slide in the stuffed dough balls, a few at a time.
- Fry the kachoris until they are golden brown and crispy on both sides, flipping them occasionally to ensure even cooking.
- Once cooked, remove the kachoris from the oil and drain excess oil on paper towels.
- Serve hot Hing Kachoris with tamarind chutney, mint chutney, or yogurt for dipping! πΏπ
