Jalebi Recipe
Ingredients:
- 1 cup all-purpose flour (maida)
- 2 tablespoons gram flour (besan)
- 1/2 teaspoon baking powder
- 1/4 teaspoon turmeric powder (optional, for color)
- 1 cup warm water
- 1 teaspoon yogurt or lemon juice
- Oil or ghee, for frying
For the sugar syrup:
- 1 cup sugar
- 1/2 cup water
- 1/4 teaspoon cardamom powder
- Saffron strands (optional, for flavor and color)
- Few drops of lemon juice (to prevent crystallization)
Instructions:
- In a mixing bowl, combine all-purpose flour, gram flour, baking powder, and turmeric powder (if using).
- Gradually add warm water to the flour mixture, stirring continuously to form a smooth batter. Add yogurt or lemon juice and mix well. Let the batter rest for 15-20 minutes.
- In the meantime, prepare the sugar syrup. In a saucepan, combine sugar and water. Bring the mixture to a boil over medium heat, stirring occasionally.
- Once the sugar has dissolved completely and the syrup has reached a one-string consistency, add cardamom powder and saffron strands (if using). Remove from heat and add a few drops of lemon juice to prevent crystallization. Keep the syrup warm.
- Heat oil or ghee in a deep frying pan or kadhai over medium heat.
- Fill a squeeze bottle or piping bag with the batter.
- Once the oil is hot, carefully squeeze the batter in a spiral shape directly into the hot oil. Fry the jalebis until they are golden brown and crispy on both sides.
- Using a slotted spoon, remove the fried jalebis from the oil and immediately dip them into the warm sugar syrup. Allow them to soak for a few seconds, then remove and place them on a plate.
- Repeat the process with the remaining batter, frying the jalebis in batches.
- Serve hot and crispy Jalebis as a delicious dessert or snack!
