Ingredients:๐Ÿ

  • 2 cups all-purpose flour
  • 2 tablespoons semolina (sooji)
  • 1/4 teaspoon baking soda
  • Salt, to taste
  • 2 tablespoons oil
  • Water, as needed

For the Filling:๐Ÿ‹

  • 1 cup yellow split peas (chana dal), soaked for 4-6 hours
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon ginger, finely chopped
  • 1 teaspoon green chili, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • Salt, to taste
  • Oil, for frying

For the Dough:๐Ÿ†

  1. In a mixing bowl, combine all-purpose flour, semolina, baking soda, and salt.
  2. Add oil to the flour mixture and rub it in with your fingertips until it resembles bread crumbs.
  3. Gradually add water and knead the mixture into a smooth dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

For the Filling:

  1. Drain the soaked chana dal and rinse it well.
  2. In a pressure cooker, cook the chana dal with enough water until it is soft but not mushy. Drain any excess water and set aside.
  3. Heat oil in a pan over medium heat. Add cumin seeds and fennel seeds and sautรฉ until they crackle.
  4. Add finely chopped ginger and green chili to the pan. Sautรฉ for a minute.
  5. Add cooked chana dal to the pan. Mix well and cook for 2-3 minutes.
  6. Add turmeric powder, red chili powder, coriander powder, garam masala powder, and salt to the pan. Mix well and cook for another 5-7 minutes until the spices are well combined and the mixture is dry. Remove from heat and let it cool.

For Making Kachori:๐ŸฅŸ

  1. Divide the dough into equal-sized balls.
  2. Roll out each dough ball into a small circle.
  3. Place a spoonful of the prepared filling in the center of each circle.
  4. Bring the edges of the dough together to seal and form a ball. Gently flatten the ball with your palms.
  5. Heat oil in a deep frying pan or kadhai over medium heat.
  6. Once the oil is hot, carefully slide in the stuffed dough balls, a few at a time.
  7. Fry the kachoris until they are golden brown and crispy on all sides.
  8. Remove the fried kachoris from the oil using a slotted spoon and drain excess oil on paper towels.
  9. Serve hot Kachoris with green chutney, tamarind chutney, or yogurt for a delicious snack!
