๐Kachori Recipe๐
Ingredients:๐
For the Dough:๐ฅ
- 2 cups all-purpose flour
- 2 tablespoons semolina (sooji)
- 1/4 teaspoon baking soda
- Salt, to taste
- 2 tablespoons oil
- Water, as needed
For the Filling:๐
- 1 cup yellow split peas (chana dal), soaked for 4-6 hours
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon ginger, finely chopped
- 1 teaspoon green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- Oil, for frying
Instructions:๐
For the Dough:๐
- In a mixing bowl, combine all-purpose flour, semolina, baking soda, and salt.
- Add oil to the flour mixture and rub it in with your fingertips until it resembles bread crumbs.
- Gradually add water and knead the mixture into a smooth dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
For the Filling:
- Drain the soaked chana dal and rinse it well.
- In a pressure cooker, cook the chana dal with enough water until it is soft but not mushy. Drain any excess water and set aside.
- Heat oil in a pan over medium heat. Add cumin seeds and fennel seeds and sautรฉ until they crackle.
- Add finely chopped ginger and green chili to the pan. Sautรฉ for a minute.
- Add cooked chana dal to the pan. Mix well and cook for 2-3 minutes.
- Add turmeric powder, red chili powder, coriander powder, garam masala powder, and salt to the pan. Mix well and cook for another 5-7 minutes until the spices are well combined and the mixture is dry. Remove from heat and let it cool.
For Making Kachori:๐ฅ
- Divide the dough into equal-sized balls.
- Roll out each dough ball into a small circle.
- Place a spoonful of the prepared filling in the center of each circle.
- Bring the edges of the dough together to seal and form a ball. Gently flatten the ball with your palms.
- Heat oil in a deep frying pan or kadhai over medium heat.
- Once the oil is hot, carefully slide in the stuffed dough balls, a few at a time.
- Fry the kachoris until they are golden brown and crispy on all sides.
- Remove the fried kachoris from the oil using a slotted spoon and drain excess oil on paper towels.
- Serve hot Kachoris with green chutney, tamarind chutney, or yogurt for a delicious snack!
