Kadai Bhindi Recipe
Ingredients:
- 250 grams okra (bhindi), washed and dried thoroughly
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt, to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves, chopped, for garnishing
Instructions:
- Trim the ends of the okra and slice them into 1-inch pieces.
- Heat oil in a kadai or pan over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions to the pan and sautรฉ until they turn golden brown.
- Add ginger-garlic paste and slit green chilies to the pan. Sautรฉ for a couple of minutes until the raw smell disappears.
- Stir in chopped tomatoes and cook until they become soft and mushy.
- Add coriander powder, turmeric powder, red chili powder, garam masala, and salt to the pan. Mix well with the onion-tomato mixture.
- Add sliced okra to the pan and mix gently to coat the okra with the spice mixture.
- Cover the pan with a lid and let the okra cook over medium-low heat for about 10-12 minutes, stirring occasionally.
- Remove the lid and check if the okra is cooked through and tender. If needed, cook for a few more minutes until done.
- Once the okra is cooked, garnish with chopped fresh coriander leaves.
- Serve the delicious Kadai Bhindi hot with roti, paratha, or rice.
