Kadai Bhindi Recipe

Ingredients:

  • 250 grams okra (bhindi), washed and dried thoroughly ๐Ÿฅ’
  • 2 onions, finely chopped ๐Ÿง…
  • 2 tomatoes, finely chopped ๐Ÿ…
  • 2 green chilies, slit lengthwise ๐ŸŒถ๏ธ
  • 1 tablespoon ginger-garlic paste ๐Ÿง„
  • 1 teaspoon cumin seeds ๐ŸŒฟ
  • 1 teaspoon coriander powder ๐ŸŒฟ
  • 1/2 teaspoon turmeric powder ๐ŸŒฟ
  • 1/2 teaspoon red chili powder ๐ŸŒถ๏ธ
  • 1/2 teaspoon garam masala ๐ŸŒฟ
  • Salt, to taste ๐Ÿง‚
  • 2 tablespoons cooking oil ๐ŸŒฟ
  • Fresh coriander leaves, chopped, for garnishing ๐ŸŒฟ

Instructions:

  1. Trim the ends of the okra and slice them into 1-inch pieces.
  2. Heat oil in a kadai or pan over medium heat. Add cumin seeds and let them splutter.
  3. Add finely chopped onions to the pan and sautรฉ until they turn golden brown.
  4. Add ginger-garlic paste and slit green chilies to the pan. Sautรฉ for a couple of minutes until the raw smell disappears.
  5. Stir in chopped tomatoes and cook until they become soft and mushy.
  6. Add coriander powder, turmeric powder, red chili powder, garam masala, and salt to the pan. Mix well with the onion-tomato mixture.
  7. Add sliced okra to the pan and mix gently to coat the okra with the spice mixture.
  8. Cover the pan with a lid and let the okra cook over medium-low heat for about 10-12 minutes, stirring occasionally.
  9. Remove the lid and check if the okra is cooked through and tender. If needed, cook for a few more minutes until done.
  10. Once the okra is cooked, garnish with chopped fresh coriander leaves.
  11. Serve the delicious Kadai Bhindi hot with roti, paratha, or rice.
