Kadai Mushroom Recipe
Ingredients:
- 250 grams mushrooms, cleaned and sliced
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 bell pepper (capsicum), sliced
- 1 teaspoon cumin seeds
- 1 tablespoon coriander seeds, crushed
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt, to taste
- Fresh coriander leaves, chopped, for garnishing
- 2 tablespoons ghee or vegetable oil
Instructions:
- Heat ghee or vegetable oil in a kadai (Indian wok) or a deep pan over medium heat.
- Add cumin seeds to the hot oil and let them splutter.
- Add chopped onions to the kadai and sautรฉ until they turn golden brown.
- Stir in ginger-garlic paste and slit green chilies. Sautรฉ for another minute.
- Add chopped tomatoes to the kadai and cook until they are soft and mushy.
- Add crushed coriander seeds, turmeric powder, red chili powder, garam masala, and salt to the kadai. Mix well with the onion-tomato mixture.
- Add sliced mushrooms and sliced bell pepper to the kadai. Mix well with the masala.
- Cover the kadai and let the mushrooms cook for about 5-7 minutes, stirring occasionally.
- Once the mushrooms are cooked and the gravy thickens, remove from heat.
- Garnish the Kadai Mushroom with freshly chopped coriander leaves.
- Serve the hot and spicy Kadai Mushroom with roti, naan, or rice.
