Kadai Mushroom Recipe

Ingredients:

  • 250 grams mushrooms, cleaned and sliced πŸ„
  • 2 onions, finely chopped πŸ§…
  • 2 tomatoes, finely chopped πŸ…
  • 2 green chilies, slit lengthwise 🌢️
  • 1 tablespoon ginger-garlic paste πŸ§„
  • 1 bell pepper (capsicum), sliced πŸ«‘
  • 1 teaspoon cumin seeds 🌿
  • 1 tablespoon coriander seeds, crushed 🌿
  • 1/2 teaspoon turmeric powder 🌿
  • 1 teaspoon red chili powder 🌢️
  • 1 teaspoon garam masala 🌿
  • Salt, to taste πŸ§‚
  • Fresh coriander leaves, chopped, for garnishing 🌿
  • 2 tablespoons ghee or vegetable oil 🌿

Instructions:

  1. Heat ghee or vegetable oil in a kadai (Indian wok) or a deep pan over medium heat.
  2. Add cumin seeds to the hot oil and let them splutter.
  3. Add chopped onions to the kadai and sautΓ© until they turn golden brown.
  4. Stir in ginger-garlic paste and slit green chilies. SautΓ© for another minute.
  5. Add chopped tomatoes to the kadai and cook until they are soft and mushy.
  6. Add crushed coriander seeds, turmeric powder, red chili powder, garam masala, and salt to the kadai. Mix well with the onion-tomato mixture.
  7. Add sliced mushrooms and sliced bell pepper to the kadai. Mix well with the masala.
  8. Cover the kadai and let the mushrooms cook for about 5-7 minutes, stirring occasionally.
  9. Once the mushrooms are cooked and the gravy thickens, remove from heat.
  10. Garnish the Kadai Mushroom with freshly chopped coriander leaves.
  11. Serve the hot and spicy Kadai Mushroom with roti, naan, or rice.
