Kadai Mushroom Recipe

Ingredients:

  • 250 grams mushrooms, cleaned and sliced ๐Ÿ„
  • 2 onions, finely chopped ๐Ÿง…
  • 2 tomatoes, finely chopped ๐Ÿ…
  • 2 green chilies, slit lengthwise ๐ŸŒถ๏ธ
  • 1 tablespoon ginger-garlic paste ๐Ÿง„
  • 1 bell pepper (capsicum), sliced ๐Ÿซ‘
  • 1 teaspoon cumin seeds ๐ŸŒฟ
  • 1 tablespoon coriander seeds, crushed ๐ŸŒฟ
  • 1/2 teaspoon turmeric powder ๐ŸŒฟ
  • 1 teaspoon red chili powder ๐ŸŒถ๏ธ
  • 1 teaspoon garam masala ๐ŸŒฟ
  • Salt, to taste ๐Ÿง‚
  • Fresh coriander leaves, chopped, for garnishing ๐ŸŒฟ
  • 2 tablespoons ghee or vegetable oil ๐ŸŒฟ

Instructions:

  1. Heat ghee or vegetable oil in a kadai (Indian wok) or a deep pan over medium heat.
  2. Add cumin seeds to the hot oil and let them splutter.
  3. Add chopped onions to the kadai and sautรฉ until they turn golden brown.
  4. Stir in ginger-garlic paste and slit green chilies. Sautรฉ for another minute.
  5. Add chopped tomatoes to the kadai and cook until they are soft and mushy.
  6. Add crushed coriander seeds, turmeric powder, red chili powder, garam masala, and salt to the kadai. Mix well with the onion-tomato mixture.
  7. Add sliced mushrooms and sliced bell pepper to the kadai. Mix well with the masala.
  8. Cover the kadai and let the mushrooms cook for about 5-7 minutes, stirring occasionally.
  9. Once the mushrooms are cooked and the gravy thickens, remove from heat.
  10. Garnish the Kadai Mushroom with freshly chopped coriander leaves.
  11. Serve the hot and spicy Kadai Mushroom with roti, naan, or rice.
