Kerala Vegetable Stew Recipe
Ingredients:
- 2 potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1 onion, thinly sliced
- 1 cup cauliflower florets
- 1 cup green peas
- 1-inch ginger, julienned
- 4 cloves garlic, minced
- 2 green chilies, slit lengthwise
- 1 cup thick coconut milk
- 1 cup thin coconut milk
- 1 cinnamon stick
- 3-4 cloves
- 3-4 cardamom pods
- A handful of curry leaves
- 2 tablespoons coconut oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat coconut oil in a pan over medium heat. Add cinnamon stick, cloves, and cardamom pods. SautΓ© for a minute until fragrant.
- Add sliced onions and sautΓ© until they turn translucent.
- Add chopped ginger, garlic, and green chilies. SautΓ© until fragrant.
- Add potatoes, carrots, cauliflower florets, and green peas to the pan. Stir well to coat with the spices.
- Pour in thin coconut milk and bring the mixture to a gentle simmer. Cover and cook until the vegetables are tender.
- Once the vegetables are cooked, add thick coconut milk and curry leaves. Stir gently and let it simmer for a few more minutes.
- Season with salt according to taste. Stir well to incorporate the flavors.
- Turn off the heat and garnish with fresh coriander leaves.
