Kori Rotti Recipe
Ingredients:
- 500g chicken pieces
- 2 onions, thinly sliced
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1-inch ginger, finely chopped
- 4 cloves garlic, minced
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A handful of curry leaves
- 2 tablespoons vegetable oil
- Salt to taste
- Ready-made Kori Rotti (dried crispy rice wafers)
Instructions:
- Heat vegetable oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Add sliced onions and sautΓ© until they turn golden brown.
- Add chopped ginger, garlic, and green chilies. SautΓ© until fragrant.
- Add turmeric powder, red chili powder, coriander powder, and garam masala. Stir well to combine.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add chicken pieces to the pan. Mix well to coat the chicken with the masala mixture.
- Pour in a little water, cover, and let the chicken cook until tender.
- Once the chicken is cooked and the gravy thickens, add curry leaves and salt to taste. Stir well.
- Remove from heat and let it cool slightly.
- To serve, place a few pieces of Kori Rotti on a plate and spoon the chicken gravy over them.
