Kozhi Varutharacha Curry Recipe

Ingredients:

For Marinating Chicken:

  • 500 grams chicken, cut into pieces
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste

For Roasting and Grinding:

  • 1/2 cup grated coconut
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon peppercorns
  • 3-4 dry red chilies
  • 1-inch piece of ginger, chopped
  • 4-5 garlic cloves
  • 1 small onion, chopped
  • 1 sprig curry leaves

Other Ingredients:

  • 2 tablespoons coconut oil or any cooking oil
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • A few curry leaves
  • Salt to taste
  • Chopped coriander leaves for garnishing

Instructions:

Marinate Chicken:

In a bowl, mix chicken pieces with turmeric powder, red chili powder, and salt. Allow it to marinate for about 20-30 minutes.

Roast and Grind:

  1. Heat a pan over medium heat and dry roast grated coconut, coriander seeds, cumin seeds, peppercorns, and dry red chilies until fragrant.
  2. Add chopped ginger, garlic cloves, chopped onion, and curry leaves to the pan. Roast until the coconut turns golden brown.
  3. Allow the roasted ingredients to cool down and then grind them into a smooth paste using a blender or food processor. Add a little water if necessary to make a paste.

Prepare Curry:

  1. Heat coconut oil or any cooking oil in a deep pan or skillet over medium heat.
  2. Add finely chopped onions and sauté until they turn translucent.
  3. Add ginger-garlic paste and slit green chilies. Sauté for a couple of minutes until the raw smell disappears.
  4. Add chopped tomatoes to the pan. Cook until they turn soft and mushy.
  5. Lower the heat and add turmeric powder. Stir well to combine.
  6. Add the marinated chicken pieces to the pan. Stir well to coat the chicken with the masala.
  7. Pour in the ground coconut paste and mix everything together.
  8. Add curry leaves and salt to taste. Mix well.
  9. Cover the pan and let the chicken curry simmer over low heat for about 20-25 minutes or until the chicken is cooked through and tender.
  10. Once the chicken is cooked, garnish the Kozhi Varutharacha Curry with chopped coriander leaves.
  11. Serve hot with steamed rice, appam, or chapati.
