Kozhi Varutharacha Curry Recipe
Ingredients:
For Marinating Chicken:
- 500 grams chicken, cut into pieces
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
For Roasting and Grinding:
- 1/2 cup grated coconut
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon peppercorns
- 3-4 dry red chilies
- 1-inch piece of ginger, chopped
- 4-5 garlic cloves
- 1 small onion, chopped
- 1 sprig curry leaves
Other Ingredients:
- 2 tablespoons coconut oil or any cooking oil
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- A few curry leaves
- Salt to taste
- Chopped coriander leaves for garnishing
Instructions:
Marinate Chicken:
In a bowl, mix chicken pieces with turmeric powder, red chili powder, and salt. Allow it to marinate for about 20-30 minutes.
Roast and Grind:
- Heat a pan over medium heat and dry roast grated coconut, coriander seeds, cumin seeds, peppercorns, and dry red chilies until fragrant.
- Add chopped ginger, garlic cloves, chopped onion, and curry leaves to the pan. Roast until the coconut turns golden brown.
- Allow the roasted ingredients to cool down and then grind them into a smooth paste using a blender or food processor. Add a little water if necessary to make a paste.
Prepare Curry:
- Heat coconut oil or any cooking oil in a deep pan or skillet over medium heat.
- Add finely chopped onions and sauté until they turn translucent.
- Add ginger-garlic paste and slit green chilies. Sauté for a couple of minutes until the raw smell disappears.
- Add chopped tomatoes to the pan. Cook until they turn soft and mushy.
- Lower the heat and add turmeric powder. Stir well to combine.
- Add the marinated chicken pieces to the pan. Stir well to coat the chicken with the masala.
- Pour in the ground coconut paste and mix everything together.
- Add curry leaves and salt to taste. Mix well.
- Cover the pan and let the chicken curry simmer over low heat for about 20-25 minutes or until the chicken is cooked through and tender.
- Once the chicken is cooked, garnish the Kozhi Varutharacha Curry with chopped coriander leaves.
- Serve hot with steamed rice, appam, or chapati.
