Litti Chokha Recipe
Ingredients:
For Litti Dough:
- 2 cups whole wheat flour (atta)
- 1/2 teaspoon salt
- Water, as needed
For Litti Filling:
- 1 cup roasted gram flour (sattu)
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 tablespoon ginger, grated
- 1 tablespoon garlic, minced
- 1 teaspoon ajwain (carom seeds)
- 1 teaspoon kalonji (nigella seeds)
- 1 teaspoon mustard oil
- Salt, to taste
- Water, as needed
For Chokha:
- 3 large potatoes, boiled and mashed
- 2 medium tomatoes, roasted and mashed
- 2-3 green chilies, finely chopped
- 1 onion, finely chopped
- 2 tablespoons fresh coriander leaves, chopped
- 1 tablespoon mustard oil
- Salt, to taste
Instructions:
For Litti Dough:
- In a mixing bowl, combine whole wheat flour and salt.
- Gradually add water and knead the flour into a stiff dough. The dough should be firm and pliable.
- Cover the dough with a damp cloth and let it rest for about 30 minutes.
For Litti Filling:
- In a bowl, combine roasted gram flour (sattu), finely chopped onion, green chilies, grated ginger, minced garlic, ajwain, kalonji, mustard oil, and salt. Mix well.
- Gradually add a little water to the mixture and knead it into a firm dough-like consistency. The water helps to bind the ingredients together.
- Divide the filling mixture into equal-sized portions and shape them into small balls. Set aside.
For Chokha:
- In a mixing bowl, combine mashed potatoes, roasted and mashed tomatoes, finely chopped green chilies, chopped onion, chopped coriander leaves, mustard oil, and salt. Mix well to combine.
- Adjust the seasoning according to taste. The chokha should have a slightly chunky texture.
Assembling and Cooking Litti:
- Preheat the oven to 180°C (350°F) or prepare a charcoal grill.
- Take a portion of the rested dough and roll it out into a small disc, about 4-5 inches in diameter.
- Place one portion of the prepared filling in the center of the rolled-out dough disc.
- Gather the edges of the dough towards the center, sealing the filling inside. Shape it into a round ball.
- Repeat the process with the remaining dough and filling to make more litti balls.
- Place the litti balls on a baking tray lined with parchment paper or on a greased baking tray.
- Bake the litti in the preheated oven for about 25-30 minutes, or until they are golden brown and cooked through. Alternatively, you can cook the litti on a charcoal grill until they are evenly charred and cooked.
Serving:
- Brush the hot litti with ghee or butter for extra flavor.
- Serve the hot litti with chokha, fresh coriander leaves for garnishing, and lemon wedges on the side.
