Makki Ki Roti with Sarson Ka Saag Recipe

Ingredients:

For Makki Ki Roti:

  • 2 cups maize flour (makki ka atta) 🌽
  • Warm water, as needed 💧
  • Salt, to taste 🧂

For Sarson Ka Saag:

  • 500 grams mustard greens (sarson) 🥬
  • 250 grams spinach leaves (palak) 🍃
  • 2 green chilies, chopped 🌶️
  • 1 tablespoon ginger-garlic paste 🧄
  • 1 onion, finely chopped 🧅
  • 2 tomatoes, finely chopped 🍅
  • 1 teaspoon cumin seeds 🌿
  • 1/2 teaspoon turmeric powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • Salt, to taste 🧂
  • 2 tablespoons ghee or vegetable oil 🌿
  • Fresh cream, for garnishing (optional) 🥛

Instructions:

For Sarson Ka Saag:

  1. Clean the mustard greens and spinach leaves thoroughly. Chop them finely and set aside.
  2. Heat ghee or vegetable oil in a pan over medium heat.
  3. Add cumin seeds to the hot oil and let them splutter.
  4. Add chopped onions to the pan and sauté until they turn golden brown.
  5. Stir in ginger-garlic paste and chopped green chilies. Sauté for another minute.
  6. Add chopped tomatoes to the pan and cook until they are soft and mushy.
  7. Add turmeric powder, red chili powder, and salt to the pan. Mix well with the onion-tomato mixture.
  8. Add chopped mustard greens and spinach to the pan. Mix well with the masala.
  9. Pour in a little water and cover the pan. Let the greens cook for about 20-25 minutes until they are completely tender.
  10. Once the greens are cooked, use a hand blender or a traditional wooden masher to blend them into a coarse paste.
  11. Cook the saag for another 5-10 minutes, allowing the flavors to meld together. Adjust the consistency by adding more water if needed.
  12. Garnish the Sarson Ka Saag with a dollop of fresh cream (if using).

For Makki Ki Roti:

  1. In a mixing bowl, combine maize flour and salt.
  2. Gradually add warm water and knead the mixture into a smooth and soft dough.
  3. Divide the dough into equal-sized balls and flatten them into discs using your palms.
  4. Heat a tawa (griddle) over medium heat.
  5. Place a flattened dough ball on the hot tawa and cook until it turns golden brown on both sides, pressing gently with a spatula.
  6. Repeat the process with the remaining dough balls to make Makki Ki Rotis.

Serving:

  1. Serve the hot and wholesome Makki Ki Roti with Sarson Ka Saag.
  2. Enjoy the traditional and flavorful combination as a hearty meal!
