Malabar Chicken Curry Recipe

Ingredients:

  • 500g chicken, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 3-4 green chilies, slit lengthwise
  • 1-inch piece of ginger, minced
  • 4-5 garlic cloves, minced
  • 1 sprig of curry leaves
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tbsp coriander powder
  • 1/2 tsp garam masala powder
  • 1/2 cup thick coconut milk
  • 2 tbsp coconut oil
  • Salt to taste
  • Fresh coriander leaves for garnish 🌿

Instructions:

  1. Heat coconut oil in a pan and add mustard seeds. Allow them to splutter.
  2. Add chopped onions, green chilies, and curry leaves. Sauté until onions turn golden brown.
  3. Add minced ginger and garlic. Sauté until the raw smell disappears.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Now, add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
  6. Add chicken pieces and coat them well with the masala.
  7. Pour in water just enough to cover the chicken pieces. Cover and cook until chicken is tender.
  8. Once the chicken is cooked, add garam masala powder and thick coconut milk. Mix well and simmer for another 5 minutes.
  9. Adjust seasoning according to taste.
  10. Garnish with fresh coriander leaves before serving. Enjoy with steamed rice or roti! 🍛
