Ingredients:

  • 500g mutton, cut into pieces 🐑

  • 2 tablespoons coriander powder 🌿
  • 1 tablespoon red chili powder 🌶️
  • 1/2 cup thick coconut milk 🥥
  • Salt to taste 🧂

Instructions:

  1. Heat coconut oil in a deep pan or pressure cooker over medium heat. Add mustard seeds and fennel seeds. Let them crackle.
  2. Add sliced onions and sauté until they turn golden brown.
  3. Add minced garlic, chopped ginger, green chilies, and curry leaves. Sauté for a couple of minutes until fragrant.
  4. Add the chopped tomatoes and cook until they are soft and pulpy.
  5. Now, add turmeric powder, coriander powder, and red chili powder. Mix well and cook for a minute.
  6. Add the mutton pieces to the pan and mix them with the masala until they are well coated.
  7. Pour in enough water to cover the mutton pieces. If using a pressure cooker, close the lid and cook for about 20-25 minutes until the mutton is tender. If using a pan, cover and simmer until the mutton is cooked through, adding water as needed.
  8. Once the mutton is cooked, add thick coconut milk to the curry. Stir well and let it simmer for another 5-7 minutes.
  9. Check the seasoning and adjust salt if necessary.
  10. In a separate small pan, heat a tablespoon of coconut oil and fry the cloves, cardamom pods, and cinnamon stick until fragrant. Add this tempering to the curry and mix well.
