Matar Kachori Recipe
Ingredients:
For the dough:
- 2 cups all-purpose flour (maida) 🌾
- 2 tablespoons semolina (sooji) 🌾
- 1/4 cup ghee or oil 🌿
- Salt, to taste 🧂
For the filling:
- 1 cup green peas (fresh or frozen), boiled and mashed 🌱
- 1 teaspoon cumin seeds 🌿
- 1 teaspoon ginger, finely chopped 🧄
- 1 green chili, finely chopped 🌶️
- 1/2 teaspoon turmeric powder 🌿
- 1 teaspoon coriander powder 🌿
- 1/2 teaspoon garam masala 🌿
- Salt, to taste 🧂
- 2 tablespoons cooking oil 🌿
Oil, for deep frying 🌿
Instructions:
- In a mixing bowl, combine all-purpose flour, semolina, ghee or oil, and salt. Mix well.
- Gradually add water and knead into a smooth dough. Cover and let it rest for 15-20 minutes.
- Meanwhile, prepare the filling. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped ginger and green chili to the pan. Sauté for a minute.
- Add mashed green peas, turmeric powder, coriander powder, garam masala, and salt. Mix well and cook for 3-4 minutes. Remove from heat and let it cool.
- Divide the dough into small lemon-sized balls. Roll out each ball into a small disc.
- Place a spoonful of the prepared filling in the center of each disc. Gather the edges and seal to form a ball.
- Gently flatten the stuffed balls with your palms to form kachoris.
- Heat oil in a kadai or deep frying pan over medium heat. Once the oil is hot, carefully slide in the kachoris in batches.
- Fry the kachoris on medium-low heat until they turn golden brown and crispy on all sides.
- Remove from oil using a slotted spoon and drain on paper towels to remove excess oil.
- Serve hot with tamarind chutney or green chutney.
