Ingredients:

For the dough:

For the sugar syrup:

  • 1 cup sugar ๐Ÿง‚
  • 1/2 cup water ๐Ÿ’ง
  • Few strands of saffron (optional) ๐ŸŒผ

Instructions:

For the dough:

  1. In a mixing bowl, combine the all-purpose flour and ghee. Rub the ghee into the flour until it resembles breadcrumbs.
  2. Gradually add water and knead the mixture into a smooth and firm dough.
  3. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

For the stuffing:

  1. In a separate bowl, mix together grated mawa, powdered sugar, cardamom powder, and chopped nuts until well combined. Set aside.

For assembling and frying:

  1. Divide the dough into small lemon-sized balls and roll them out into small discs.
  2. Place a spoonful of the mawa stuffing in the center of each disc.
  3. Gently fold and pinch the edges of the dough to seal the stuffing inside and shape it into a ball.
  4. Flatten the stuffed balls slightly with your palms.
  5. Heat vegetable oil in a deep frying pan over medium heat.
  6. Carefully slide the stuffed kachoris into the hot oil and fry until they turn golden brown and crispy on both sides.
  7. Remove the fried kachoris from the oil using a slotted spoon and drain excess oil on paper towels.

For the sugar syrup:

  1. In a saucepan, combine sugar, water, and saffron strands (if using).
  2. Bring the mixture to a boil and simmer until it reaches a one-string consistency.
  3. Remove the sugar syrup from heat and let it cool slightly.

Serving:

  1. Dip the fried kachoris in the warm sugar syrup, ensuring they are coated evenly.
  2. Allow the kachoris to soak in the syrup for a few minutes.
  3. Serve the delicious and decadent Mawa Kachoris garnished with additional chopped nuts.
