Mawa Kachori Recipe
Ingredients:
For the dough:
- 2 cups all-purpose flour ๐พ
- 1/4 cup ghee (clarified butter) ๐ง
- Water, as needed ๐ง
For the stuffing:
- 1 cup mawa (khoya), grated ๐ฅ
- 1/4 cup powdered sugar ๐ง
- 1/4 teaspoon cardamom powder ๐ฟ
- 2 tablespoons chopped nuts (almonds, cashews, pistachios) ๐ฅ
- Vegetable oil, for deep frying ๐ฟ
For the sugar syrup:
- 1 cup sugar ๐ง
- 1/2 cup water ๐ง
- Few strands of saffron (optional) ๐ผ
Instructions:
For the dough:
- In a mixing bowl, combine the all-purpose flour and ghee. Rub the ghee into the flour until it resembles breadcrumbs.
- Gradually add water and knead the mixture into a smooth and firm dough.
- Cover the dough with a damp cloth and let it rest for 15-20 minutes.
For the stuffing:
- In a separate bowl, mix together grated mawa, powdered sugar, cardamom powder, and chopped nuts until well combined. Set aside.
For assembling and frying:
- Divide the dough into small lemon-sized balls and roll them out into small discs.
- Place a spoonful of the mawa stuffing in the center of each disc.
- Gently fold and pinch the edges of the dough to seal the stuffing inside and shape it into a ball.
- Flatten the stuffed balls slightly with your palms.
- Heat vegetable oil in a deep frying pan over medium heat.
- Carefully slide the stuffed kachoris into the hot oil and fry until they turn golden brown and crispy on both sides.
- Remove the fried kachoris from the oil using a slotted spoon and drain excess oil on paper towels.
For the sugar syrup:
- In a saucepan, combine sugar, water, and saffron strands (if using).
- Bring the mixture to a boil and simmer until it reaches a one-string consistency.
- Remove the sugar syrup from heat and let it cool slightly.
Serving:
- Dip the fried kachoris in the warm sugar syrup, ensuring they are coated evenly.
- Allow the kachoris to soak in the syrup for a few minutes.
- Serve the delicious and decadent Mawa Kachoris garnished with additional chopped nuts.
