Navratan Korma Recipe 🍽️
Ingredients:
- 1 cup mixed vegetables (carrots, peas, cauliflower, beans, etc.), diced
- 1/2 cup paneer (Indian cottage cheese), cubed
- 1/4 cup cashew nuts, soaked in warm water for 30 minutes
- 1/4 cup raisins
- 1 onion, finely chopped
- 2 tomatoes, finely chopped or pureed
- 1 tablespoon ginger-garlic paste
- 1 green chili, slit lengthwise
- 1/2 cup fresh cream
- 2 tablespoons ghee or vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- Water, as needed
For Garnishing:
- Chopped coriander leaves
- Sliced almonds or cashew nuts
- Pomegranate seeds
Instructions:
- Heat ghee or vegetable oil in a large pan or kadhai over medium heat.
- Add cumin seeds to the hot oil and let them splutter.
- Add finely chopped onions to the pan and sauté until they turn golden brown.
- Add ginger-garlic paste and slit green chili. Sauté for a couple of minutes until the raw smell disappears.
- Add finely chopped tomatoes or tomato puree to the pan. Cook until they turn soft and mushy.
- Drain the soaked cashew nuts and transfer them to a blender. Blend into a smooth paste using a little water.
- Add the cashew nut paste to the pan. Mix well to combine with the onions and tomatoes.
- Add coriander powder, turmeric powder, red chili powder, garam masala powder, and salt to the pan. Mix well to combine.
- Add diced mixed vegetables and paneer cubes to the pan. Mix well to coat them with the spice mixture.
- Add water to the pan to adjust the consistency of the korma. Cover the pan with a lid and let the vegetables cook over medium-low heat until they are tender.
- Once the vegetables are cooked through, add fresh cream to the pan. Mix well to incorporate.
- Add raisins to the korma and let it simmer for another 2-3 minutes.
Serving:
- Transfer the Navratan Korma to a serving dish.
- Garnish with chopped coriander leaves, sliced almonds or cashew nuts, and pomegranate seeds.
- Serve hot Navratan Korma with roti, naan, or rice for a royal and festive North Indian meal.
