Neymeen Curry Recipe
Ingredients:
- 500g Neymeen (Kingfish) fillets, cut into pieces
- 2 onions, thinly sliced
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1-inch ginger, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon turmeric powder
- 2 teaspoons chili powder
- 1 tablespoon coriander powder
- 1/2 teaspoon fenugreek seeds
- A handful of curry leaves
- 2 tablespoons coconut oil
- 1 cup thick coconut milk
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat coconut oil in a pan over medium heat. Add fenugreek seeds and let them splutter.
