Palak Aloo Recipe

Palak Aloo Recipe

Ingredients:

  • 2 cups spinach leaves (palak), washed and chopped 🌿
  • 2 medium-sized potatoes, peeled and diced 🥔
  • 1 onion, finely chopped 🧅
  • 2 tomatoes, finely chopped 🍅
  • 1 tablespoon ginger-garlic paste 🧄
  • 1 green chili, finely chopped 🌶️
  • 1/2 teaspoon cumin seeds 🌿
  • 1/2 teaspoon turmeric powder 🌿
  • 1 teaspoon coriander powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • Salt, to taste 🧂
  • 2 tablespoons oil or ghee 🌿
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

  1. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions to the pan and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and chopped green chili. Sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes to the pan and cook until they turn mushy.
  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
  6. Add diced potatoes to the pan and sauté for 2-3 minutes.
  7. Add chopped spinach leaves to the pan and mix everything well.
  8. Cover the pan with a lid and let the potatoes and spinach cook on low heat until they are tender, stirring occasionally.
  9. Once the potatoes are cooked through and the spinach is wilted, check for seasoning and adjust if needed.
  10. Garnish with chopped fresh coriander leaves.
  11. Serve hot with roti or rice.
