Paneer Kofta Recipe

Ingredients:

For Paneer Kofta:

  • 200 grams paneer (Indian cottage cheese), grated 🧀
  • 2 medium-sized potatoes, boiled and mashed 🥔
  • 2 tablespoons cornflour or all-purpose flour 🌾
  • 1 teaspoon ginger-garlic paste 🧄
  • 1 green chili, finely chopped 🌶️
  • 1/2 teaspoon garam masala 🌿
  • Salt, to taste 🧂
  • Oil, for frying 🌿

For Gravy:

  • 2 onions, finely chopped 🧅
  • 2 tomatoes, finely chopped 🍅
  • 1 tablespoon ginger-garlic paste 🧄
  • 1 green chili, finely chopped 🌶️
  • 1/2 teaspoon cumin seeds 🌿
  • 1/2 teaspoon turmeric powder 🌿
  • 1 teaspoon coriander powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • 1/2 teaspoon garam masala 🌿
  • 1/4 cup fresh cream (optional) 🥛
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

For Paneer Kofta:

  1. In a mixing bowl, combine grated paneer, mashed potatoes, cornflour or all-purpose flour, ginger-garlic paste, chopped green chili, garam masala, and salt.
  2. Mix well to form a smooth and firm dough.
  3. Divide the dough into small lemon-sized balls and shape them into round koftas.
  4. Heat oil in a deep frying pan over medium heat.
  5. Fry the paneer koftas in batches until they turn golden brown and crispy.
  6. Remove them from the oil and drain excess oil on a paper towel.

For Gravy:

  1. Heat oil in a separate pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions to the pan and sauté until they turn golden brown.
  3. Stir in ginger-garlic paste and chopped green chili. Sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes to the pan and cook until they turn mushy.
  5. Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.
  6. Cook the gravy until the oil starts to separate from the masala.
  7. Add fresh cream (if using) and mix well to combine. Cook for another minute.
  8. Add water as needed to adjust the consistency of the gravy.
  9. Add the fried paneer koftas to the gravy and gently simmer for 2-3 minutes.
  10. Garnish with chopped fresh coriander leaves.
