Paneer Kofta Recipe
Ingredients:
For Paneer Kofta:
- 200 grams paneer (Indian cottage cheese), grated 🧀
- 2 medium-sized potatoes, boiled and mashed 🥔
- 2 tablespoons cornflour or all-purpose flour 🌾
- 1 teaspoon ginger-garlic paste 🧄
- 1 green chili, finely chopped 🌶️
- 1/2 teaspoon garam masala 🌿
- Salt, to taste 🧂
- Oil, for frying 🌿
For Gravy:
- 2 onions, finely chopped 🧅
- 2 tomatoes, finely chopped 🍅
- 1 tablespoon ginger-garlic paste 🧄
- 1 green chili, finely chopped 🌶️
- 1/2 teaspoon cumin seeds 🌿
- 1/2 teaspoon turmeric powder 🌿
- 1 teaspoon coriander powder 🌿
- 1/2 teaspoon red chili powder 🌶️
- 1/2 teaspoon garam masala 🌿
- 1/4 cup fresh cream (optional) 🥛
- Fresh coriander leaves, chopped, for garnishing 🌿
Instructions:
For Paneer Kofta:
- In a mixing bowl, combine grated paneer, mashed potatoes, cornflour or all-purpose flour, ginger-garlic paste, chopped green chili, garam masala, and salt.
- Mix well to form a smooth and firm dough.
- Divide the dough into small lemon-sized balls and shape them into round koftas.
- Heat oil in a deep frying pan over medium heat.
- Fry the paneer koftas in batches until they turn golden brown and crispy.
- Remove them from the oil and drain excess oil on a paper towel.
For Gravy:
- Heat oil in a separate pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions to the pan and sauté until they turn golden brown.
- Stir in ginger-garlic paste and chopped green chili. Sauté for a minute until the raw smell disappears.
- Add chopped tomatoes to the pan and cook until they turn mushy.
- Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.
- Cook the gravy until the oil starts to separate from the masala.
- Add fresh cream (if using) and mix well to combine. Cook for another minute.
- Add water as needed to adjust the consistency of the gravy.
- Add the fried paneer koftas to the gravy and gently simmer for 2-3 minutes.
- Garnish with chopped fresh coriander leaves.
