Pav Bhaji Recipe
Ingredients:
- 4 medium potatoes, boiled and mashed 🥔
- 2 cups mixed vegetables (such as carrots, peas, cauliflower), boiled and mashed 🥕🥦
- 2 onions, finely chopped 🧅
- 2 tomatoes, finely chopped 🍅
- 1 green bell pepper, finely chopped 🫑
- 4 cloves garlic, minced 🧄
- 1-inch piece ginger, grated 🧅
- 2 green chilies, finely chopped 🌶️
- 2 tablespoons pav bhaji masala
- 1 teaspoon red chili powder 🌶️
- 1 teaspoon turmeric powder
- Salt, to taste 🧂
- 2 tablespoons butter 🧈
- Fresh coriander leaves, chopped, for garnishing 🌿
- Pav (bread rolls), lightly toasted with butter, for serving 🍞
Instructions:
- Heat butter in a large pan or kadhai over medium heat. Add chopped onions and sauté until they turn translucent.
- Add minced garlic, grated ginger, and chopped green chilies. Sauté for another minute.
- Add finely chopped tomatoes and cook until they turn soft and mushy.
- Add chopped green bell pepper and cook until they are slightly softened.
- Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes to allow the spices to release their flavors.
- Add boiled and mashed potatoes and mixed vegetables to the pan. Mix everything together until well combined.
- Using a potato masher or the back of a spoon, mash the vegetables while stirring continuously. Cook for another 5-7 minutes until the bhaji becomes thick and all the flavors are well incorporated.
- Garnish the Pav Bhaji with chopped fresh coriander leaves.
- Serve hot Pav Bhaji with toasted pav bread rolls, sliced onions, and a wedge of lemon on the side! 🍋
