Pav Bhaji Recipe

Ingredients:

  • 4 medium potatoes, boiled and mashed 🥔
  • 2 cups mixed vegetables (such as carrots, peas, cauliflower), boiled and mashed 🥕🥦
  • 2 onions, finely chopped 🧅
  • 2 tomatoes, finely chopped 🍅
  • 1 green bell pepper, finely chopped 🫑
  • 4 cloves garlic, minced 🧄
  • 1-inch piece ginger, grated 🧅
  • 2 green chilies, finely chopped 🌶️
  • 2 tablespoons pav bhaji masala
  • 1 teaspoon red chili powder 🌶️
  • 1 teaspoon turmeric powder
  • Salt, to taste 🧂
  • 2 tablespoons butter 🧈
  • Fresh coriander leaves, chopped, for garnishing 🌿
  • Pav (bread rolls), lightly toasted with butter, for serving 🍞

Instructions:

  1. Heat butter in a large pan or kadhai over medium heat. Add chopped onions and sauté until they turn translucent.
  2. Add minced garlic, grated ginger, and chopped green chilies. Sauté for another minute.
  3. Add finely chopped tomatoes and cook until they turn soft and mushy.
  4. Add chopped green bell pepper and cook until they are slightly softened.
  5. Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes to allow the spices to release their flavors.
  6. Add boiled and mashed potatoes and mixed vegetables to the pan. Mix everything together until well combined.
  7. Using a potato masher or the back of a spoon, mash the vegetables while stirring continuously. Cook for another 5-7 minutes until the bhaji becomes thick and all the flavors are well incorporated.
  8. Garnish the Pav Bhaji with chopped fresh coriander leaves.
  9. Serve hot Pav Bhaji with toasted pav bread rolls, sliced onions, and a wedge of lemon on the side! 🍋
