Puri Sabzi Recipe

Ingredients:

For Puri:

  • 2 cups whole wheat flour ๐ŸŒพ
  • Water, as needed ๐Ÿ’ง
  • Salt, to taste ๐Ÿง‚
  • Oil, for frying ๐ŸŒฟ

For Sabzi (Potato Curry):

  • 4 medium-sized potatoes, boiled and diced ๐Ÿฅ”
  • 1 onion, finely chopped ๐Ÿง…
  • 2 tomatoes, chopped ๐Ÿ…
  • 2 green chilies, slit lengthwise ๐ŸŒถ๏ธ
  • 1 teaspoon ginger-garlic paste ๐Ÿง„
  • 1/2 teaspoon cumin seeds ๐ŸŒฟ
  • 1/2 teaspoon turmeric powder ๐ŸŒฟ
  • 1 teaspoon red chili powder ๐ŸŒถ๏ธ
  • 1 teaspoon coriander powder ๐ŸŒฟ
  • 1/2 teaspoon garam masala ๐ŸŒฟ
  • Salt, to taste ๐Ÿง‚
  • Fresh coriander leaves, chopped ๐ŸŒฟ
  • Cooking oil ๐ŸŒฟ
  • Water, as needed ๐Ÿ’ง

Instructions:

For Puri:

  1. In a large mixing bowl, combine the whole wheat flour and salt.
  2. Gradually add water and knead into a smooth dough.
  3. Divide the dough into small balls and roll each ball into a thin disc using a rolling pin.
  4. Heat oil in a deep frying pan. Once hot, fry the rolled puris until they puff up and turn golden brown.
  5. Remove from oil and drain excess oil using paper towels. Keep aside.

For Sabzi:

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Add chopped onions and sautรฉ until golden brown.
  3. Stir in ginger-garlic paste and slit green chilies. Cook for a minute.
  4. Add chopped tomatoes and cook until they turn soft.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add boiled and diced potatoes to the pan. Stir gently to coat them with the masala.
  7. Pour water into the pan and bring the mixture to a gentle boil.
  8. Simmer for a few minutes until the curry thickens and potatoes are well-coated with the masala.
  9. Sprinkle garam masala and chopped coriander leaves. Mix well.
  10. Remove from heat and serve hot with puris.
