Puttu and Kadala Curry Recipe

Puttu (Steamed Rice Cake)

Ingredients:

  • 2 cups rice flour
  • 1/2 cup grated coconut
  • Water, as needed
  • Salt, to taste

Instructions:

  1. Prepare Puttu Mixture:
    • In a mixing bowl, combine rice flour with salt. Gradually add water while mixing until the mixture resembles coarse crumbs.
  2. Layer with Coconut:
    • Layer a puttu maker or steamer with grated coconut followed by the prepared rice flour mixture, repeating until the puttu maker is filled.
  3. Steam:
    • Steam the puttu for about 8-10 minutes until cooked through.
  4. Serve:
    • Once done, unmold the puttu onto a plate and serve hot with Kadala Curry.

Kadala Curry (Black Chickpea Curry)

Ingredients:

  • 1 cup black chickpeas (kadala), soaked overnight
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit lengthwise
  • 1-inch piece of ginger, grated
  • 4 cloves garlic, minced
  • 1 sprig curry leaves
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons coconut oil
  • Salt, to taste
  • Chopped coriander leaves, for garnish

Instructions:

  1. Cook Chickpeas:
    • Cook the soaked black chickpeas with water and salt in a pressure cooker until soft. Drain and set aside.
  2. Prepare Curry Base:
    • Heat coconut oil in a pan. Add mustard seeds and cumin seeds. Add chopped onions and sauté until golden brown.
  3. Add Aromatics:
    • Add grated ginger, minced garlic, slit green chilies, and curry leaves. Sauté until fragrant.
  4. Add Spices:
    • Add turmeric powder, coriander powder, red chili powder, and salt. Cook for a minute.
  5. Add Tomatoes:
    • Add chopped tomatoes and cook until soft.
  6. Add Cooked Chickpeas:
    • Add the cooked chickpeas and mix well.
  7. Simmer:
    • Add water if needed and simmer for 10-15 minutes.
  8. Finish with Garam Masala:
    • Sprinkle garam masala and cook for a couple of minutes.
  9. Garnish and Serve:
    • Garnish with chopped coriander leaves and serve hot with Puttu.
