Rabri Recipe
Ingredients:
- 1 liter full-fat milk 🥛
- 1/2 cup sugar 🍬
- 1/4 teaspoon cardamom powder 🌿
- A pinch of saffron strands, soaked in warm milk 🌼
- Chopped nuts (almonds, pistachios) for garnishing 🥜
Instructions:
- Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.
- Once the milk comes to a boil, reduce the heat to low and let it simmer.
- Stir the milk occasionally to prevent it from sticking to the bottom of the pan.
- Continue to simmer the milk until it reduces to about half its original quantity, stirring frequently. This process may take 1-2 hours.
- Once the milk has reduced significantly and thickened, add sugar and cardamom powder. Mix well until the sugar dissolves completely.
- Add the soaked saffron strands along with the milk into the pan. Mix well to infuse the flavor and color.
- Continue to cook the mixture on low heat for another 10-15 minutes, stirring continuously, until it reaches a thick and creamy consistency.
- Once the Rabri has reached the desired consistency, remove it from the heat and let it cool slightly.
- Transfer the Rabri to a serving dish or individual bowls.
- Garnish the Rabri with chopped nuts, such as almonds and pistachios, for added flavor and texture.
- Chill the Rabri in the refrigerator for at least 2-3 hours before serving.
- Serve cold Rabri as a decadent dessert after meals or on special occasions! 🍨
