Rabri Recipe

Ingredients:

  • 1 liter full-fat milk 🥛
  • 1/2 cup sugar 🍬
  • 1/4 teaspoon cardamom powder 🌿
  • A pinch of saffron strands, soaked in warm milk 🌼
  • Chopped nuts (almonds, pistachios) for garnishing 🥜

Instructions:

  1. Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat.
  2. Once the milk comes to a boil, reduce the heat to low and let it simmer.
  3. Stir the milk occasionally to prevent it from sticking to the bottom of the pan.
  4. Continue to simmer the milk until it reduces to about half its original quantity, stirring frequently. This process may take 1-2 hours.
  5. Once the milk has reduced significantly and thickened, add sugar and cardamom powder. Mix well until the sugar dissolves completely.
  6. Add the soaked saffron strands along with the milk into the pan. Mix well to infuse the flavor and color.
  7. Continue to cook the mixture on low heat for another 10-15 minutes, stirring continuously, until it reaches a thick and creamy consistency.
  8. Once the Rabri has reached the desired consistency, remove it from the heat and let it cool slightly.
  9. Transfer the Rabri to a serving dish or individual bowls.
  10. Garnish the Rabri with chopped nuts, such as almonds and pistachios, for added flavor and texture.
  11. Chill the Rabri in the refrigerator for at least 2-3 hours before serving.
  12. Serve cold Rabri as a decadent dessert after meals or on special occasions! 🍨
