Rajasthani Papad Ki Sabzi Recipe
Ingredients:
- 4-5 papads (any variety), broken into small pieces 🍽️
- 1 onion, finely chopped 🧅
- 2 tomatoes, finely chopped 🍅
- 1 tablespoon ginger-garlic paste 🧄
- 1 green chili, slit lengthwise 🌶️
- 1 teaspoon cumin seeds 🌿
- 1/2 teaspoon turmeric powder 🌿
- 1 teaspoon coriander powder 🌿
- 1/2 teaspoon red chili powder 🌶️
- 1/2 teaspoon garam masala 🌿
- Salt, to taste 🧂
- 2 tablespoons cooking oil 🌿
- Fresh coriander leaves, chopped, for garnishing 🌿
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions to the pan and sauté until golden brown.
- Add ginger-garlic paste and slit green chili to the pan. Sauté for a couple of minutes until the raw smell disappears.
- Stir in chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, coriander powder, red chili powder, garam masala, and salt to the pan. Mix well.
- Add broken papad pieces to the pan and mix gently to coat them with the masala.
- Cover the pan and let the Papad Ki Sabzi simmer for a few minutes, allowing the flavors to meld together.
- Once done, garnish with chopped fresh coriander leaves.
- Serve hot with roti or rice.
