Rajma Masala Recipe

Ingredients:

  • 1 cup dried kidney beans (rajma), soaked overnight 🌿
  • 2 tablespoons oil or ghee 🌿
  • 1 teaspoon cumin seeds 🌿
  • 2 onions, finely chopped 🧅
  • 2 tomatoes, finely chopped or pureed 🍅
  • 1 tablespoon ginger-garlic paste 🧄
  • 1 green chili, slit lengthwise 🌶️
  • 1 teaspoon turmeric powder 🌿
  • 1 tablespoon coriander powder 🌿
  • 1/2 teaspoon red chili powder 🌶️
  • 1 teaspoon garam masala 🌿
  • Salt, to taste 🧂
  • Fresh coriander leaves, chopped, for garnishing 🌿

Instructions:

  1. Drain the soaked kidney beans and rinse them under running water.
  2. In a pressure cooker, add the soaked kidney beans along with enough water to cover them. Cook for about 4-5 whistles or until they are soft and cooked through.
  3. Heat oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
  4. Add chopped onions to the pan and sauté until they turn golden brown.
  5. Stir in ginger-garlic paste and slit green chili. Sauté for a minute until the raw smell disappears.
  6. Add chopped tomatoes or tomato puree to the pan and cook until they turn mushy.
  7. Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.
  8. Once the masala is cooked and the oil separates, add the cooked kidney beans along with the water they were cooked in.
  9. Mash a few kidney beans with the back of a spoon to thicken the gravy.
  10. Simmer the Rajma Masala on low heat for 10-15 minutes, stirring occasionally, until the flavors meld together.
  11. Once done, garnish with chopped fresh coriander leaves.
  12. Serve hot with steamed rice or roti.
