Ingredients:

  1. 1 cup of rice (preferably parboiled rice)
  2. 1/4 cup of urad dal (split black gram)
  3. 1/4 cup of chana dal (split chickpeas)
  4. 1/2 teaspoon fenugreek seeds
  5. Salt to taste
  6. Water for soaking and grinding
  7. Oil or ghee for cooking

Instructions:

1. Preparation:

  • Wash the rice and dals (lentils) thoroughly under running water.
  • Soak the rice, urad dal, chana dal, and fenugreek seeds in water separately for at least 6 hours or overnight.
  • After soaking, drain the water from each ingredient.

2. Grinding the Batter:

  • In a blender or wet grinder, grind the soaked urad dal, chana dal, and fenugreek seeds together with a little water to a smooth and fluffy consistency.
  • Transfer the ground dal mixture to a large bowl.
  • Next, grind the soaked rice to a smooth batter consistency. You may need to add water gradually while grinding to achieve the right consistency.
  • Combine the rice batter with the dal batter in the bowl.
  • Add salt to taste and mix well using your hands. The consistency of the batter should be similar to that of pancake batter.
  • Cover the bowl with a clean cloth or lid and let the batter ferment in a warm place for 8-12 hours or overnight. During fermentation, the batter will rise and become slightly bubbly.

3. Making Dosa:

  • After the batter has fermented, gently stir it to mix well.
  • Heat a non-stick or cast-iron skillet (tawa) over medium heat.
  • Once the skillet is hot, pour a ladleful of the dosa batter onto the center of the skillet.
  • Using the back of the ladle, spread the batter in a circular motion to form a thin, even layer.
  • Drizzle a little oil or ghee around the edges of the dosa and in the center.
  • Cook the dosa for 1-2 minutes, or until the edges start to lift and the bottom turns golden brown.
  • Carefully flip the dosa using a spatula and cook for another 1-2 minutes on the other side, until crisp and golden brown.
  • Remove the dosa from the skillet and serve hot with chutney, sambar, or any desired accompaniment.

4. Serving:

  • Serve the dosa hot with coconut chutney, tomato chutney, sambar (a flavorful lentil-based stew), or potato masala (spiced mashed potatoes).
