Samosas Recipe 
Ingredients:
For the dough:
- 2 cups all-purpose flour
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- Water, as needed
For the filling:
- 3-4 medium potatoes, boiled and mashed
- 1/2 cup green peas, boiled
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt, to taste
- Fresh coriander leaves, chopped
- Vegetable oil, for frying
For serving:
- Tamarind chutney or mint chutney
- Green chutney
- Yogurt or raita
Instructions:
For the dough:
- In a large mixing bowl, combine all-purpose flour, vegetable oil, and salt.
- Gradually add water and knead the mixture into a smooth and firm dough.
- Cover the dough with a damp cloth and let it rest for at least 30 minutes.
For the filling:
- Heat a little vegetable oil in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and green chilies to the pan. Sautรฉ until the onions turn translucent.
- Add ginger-garlic paste and sautรฉ for another minute.
- Add coriander powder, turmeric powder, garam masala, and salt to the pan. Mix well.
- Add boiled and mashed potatoes along with boiled green peas to the pan. Mix everything together and cook for 2-3 minutes.
- Add chopped fresh coriander leaves to the pan. Mix well and remove from heat.
For assembling the samosas:
- Divide the dough into equal-sized balls and roll each ball into a thin oval-shaped sheet.
- Cut each sheet in half to form two semi-circles.
- Take one semi-circle and fold it into a cone, sealing the edges with water.
- Fill the cone with the potato-pea mixture and seal the top edge with water to form a triangular shape.
- Repeat the process with the remaining dough and filling.
For frying:
- Heat vegetable oil in a deep frying pan over medium heat.
- Carefully place the assembled samosas into the hot oil and fry until they are golden brown and crispy.
- Remove the fried samosas from the oil and drain excess oil on paper towels.
For serving:
- Serve the hot and crispy samosas with tamarind chutney, green chutney, and yogurt or raita.
