Ingredients:

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.
  3. Add the cold cubed vegan butter or coconut oil to the dry ingredients. Using a pastry cutter or your fingers, rub the fat into the flour mixture until it resembles coarse crumbs.
  4. In a separate small bowl, mix together the almond milk, vanilla extract, and lemon juice or apple cider vinegar. Let it sit for a few minutes to curdle and activate.

  7. Roll out the dough to about 1 inch (2.5 cm) thickness. Use a round cookie cutter (about 2 inches or 5 cm in diameter) to cut out the scones, pressing straight down without twisting the cutter.
  8. Place the scones onto the prepared baking sheet, leaving some space between each one.
  9. Optional: Brush the tops of the scones with a little almond milk or melted vegan butter for a golden finish.
  10. Bake in the preheated oven for 12-15 minutes or until the scones are golden brown and cooked through.
