Vegetable Biryani Recipe
Ingredients:
- 2 cups basmati rice, soaked for 30 minutes
- Assorted vegetables (carrots, peas, beans, cauliflower), chopped
- 1 onion, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 2 tablespoons ginger-garlic paste
- 2 green chilies, slit lengthwise
- Whole spices (cinnamon, cardamom, cloves)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Fresh coriander leaves, chopped
- Fresh mint leaves, chopped
- Cooking oil or ghee
- Salt, to taste
- Saffron strands soaked in warm milk (optional)
Instructions:
- Heat oil or ghee in a large pot. Add the whole spices and cumin seeds, and sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the ginger-garlic paste and slit green chilies. Cook for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add the assorted vegetables and sauté for a few minutes.
- In a bowl, whisk together yogurt, turmeric powder, red chili powder, and salt. Pour this mixture into the pot and mix well.
- Drain the soaked rice and add it to the pot. Gently mix everything together.
- Add enough water to cook the rice (approximately double the quantity of rice). Cover and cook until the rice is 90% done.
- Sprinkle garam masala, chopped coriander leaves, and mint leaves over the rice. Drizzle saffron-infused milk (if using) on top.
- Cover and cook on low heat for another 5-7 minutes until the rice is fully cooked and aromatic.
- Fluff the biryani gently with a fork and serve hot.
