Vegetable Biryani Recipe

Ingredients:

  • 2 cups basmati rice, soaked for 30 minutes 🍚

  • 1 teaspoon cumin seeds 🌿
  • 1 teaspoon turmeric powder 🌿
  • 1 teaspoon red chili powder 🌢️
  • 1 teaspoon garam masala 🌿
  • Fresh coriander leaves, chopped 🌿
  • Fresh mint leaves, chopped 🌿
  • Cooking oil or ghee 🌿

  • Saffron strands soaked in warm milk (optional) πŸ₯›

Instructions:

  1. Heat oil or ghee in a large pot. Add the whole spices and cumin seeds, and sautΓ© until fragrant.
  2. Add the sliced onions and cook until golden brown.
  3. Stir in the ginger-garlic paste and slit green chilies. Cook for a minute until the raw smell disappears.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.
  5. Add the assorted vegetables and sautΓ© for a few minutes.
  6. In a bowl, whisk together yogurt, turmeric powder, red chili powder, and salt. Pour this mixture into the pot and mix well.
  7. Drain the soaked rice and add it to the pot. Gently mix everything together.
  8. Add enough water to cook the rice (approximately double the quantity of rice). Cover and cook until the rice is 90% done.
  9. Sprinkle garam masala, chopped coriander leaves, and mint leaves over the rice. Drizzle saffron-infused milk (if using) on top.
  10. Cover and cook on low heat for another 5-7 minutes until the rice is fully cooked and aromatic.
  11. Fluff the biryani gently with a fork and serve hot.
